321 Ribs

The 321 method is a great way to deliver consistent results when cooking spare ribs. The combination of time in the smoke, light braising with fats and sugar and final caramelisation of sugars has been wildly popular for beginners and more seasoned cooks alike. While there are other methods that also deliver fantastic results, this method is well worth a crack. In this video we break down the process and walk you through the steps to deliver fantastic, smoked ribs.

To break the process down, the 321 method is essentially":

  • 3 hours smoking the ribs

  • 2 hours cooking the ribs wrapped in foil or butchers paper, with some fat and sweeteners

  • 1 hour unwrapped and sauced
